I've been brewing this coffee with my Chemex and the sweetness is incredible—it's like tasting dried fruit without any added sugar. The fact that it comes from the largest farm in Costa Rica doesn't matter to me, but the care in the anaerobic fermentation is clearly there.
The fermentation process really comes through in the most wonderful way—this is unlike any Costa Rican coffee I’ve tried. The cup is smooth with a deep, almost tropical fruitiness that lingers nicely. Definitely worth the hype for a special morning brew.
I was curious about how a coffee from such a huge farm could taste this refined, and the answer is in the anaerobic process—it’s incredibly clean with a deep, fruity sweetness that lingers. The roast is perfectly balanced, not a hint of bitterness.
