To ekscytujący przykład tego, co Peru ma do zaoferowania, i bardzo się cieszymy, że możemy się nim z Wami podzielić. Pochodzi z farmy San Fermin położonej w dystrykcie Alto Inambari w prowincji Sandia, na wysokości około 1650 m n.p.m. To niedaleko Boliwii! Pastor i Elena uprawiają kawę, między innymi, od 25 lat, ale dopiero niedawno zaczęli skupiać się na jakości. Region ten jest właściwie znany z nagradzanej kawy, mimo że panuje tam dość dzika pogoda, a także jest bardzo odległy i brakuje mu infrastruktury. Znany jest również z produkcji koki (i nie, nie kakao, chociaż to też tam uprawiają – mówię o liściach, które przerabia się na ten biały proszek...). Produkcja koki jest lukratywna i legalna w małych ilościach, ale rolnicy wyrywają swoje krzewy kawy, aby sadzić kokę, co jest szkoda, gdy kawa smakuje tak jak ta! Tak czy inaczej, ta kawa składa się z odmian Red Bourbon i Typica. W filiżance jest kwiatowa, z nutami cytrusowymi i dużą słodyczą czekoladowo-słodową.
