Un ultimo caffè per questa raccolta da Finca El Salvador di nuovo, ma questo è un po' speciale, è un piccolo lotto della varietà 'Kenya' che Rodolfo ha propagato e coltivato nella sua fattoria sulle pendici della montagna Cerro el Aguila, ad Apaneca-Ilamatepec. Si dice che questa varietà sia stata riportata da un viaggio di caccia in Kenya e sia stata coltivata ma poi abbandonata, solo per essere salvata di nuovo. Potreste ricordare la varietà Kenya dalla fattoria di caffè Divina, che non è lontana da Finca El Salvador. In un viaggio intorno alla cima della montagna cercando caffè da processare, Rodolfo ha trovato Divina e ha finito per fare il suo secondo processo naturale con questa varietà. Rodolfo ha raccolto alcuni semi e li ha piantati nel 2014 su Finca El Salvador. Cresce solo ad altitudini più elevate nella fattoria e separa manualmente le ciliegie e usa un processo naturale con la fidata macerazione delle ciliegie di 48 ore. In tazza è dolce cioccolato al latte ma con un'acidità brillante e complessa 'kenyana'!
