First sip genuinely threw me off — I kept waiting for that washed Ethiopian brightness to fade, but it just keeps that tea-like clarity all the way down. Brewed it in a V60 and the cup stayed clean and sweet even as it cooled. This is the kind of coffee that makes you rethink what Peru can do.
The tasting notes really do lean into that washed Ethiopian territory, with a bright, floral acidity that makes this Peru stand out. I’ve been brewing it as a pour-over all week and it’s consistently clean and sweet from the first cup to the last.
The first sip genuinely fooled me—it has that delicate, tea-like brightness you'd expect from a washed Ethiopian, but the finish is all its own. The cup stays clean and sweet even as it cools, which is rare. This is easily the most interesting coffee I've had in a while.
