Category: Archived Coffee

This coffee is part of a project run by Nordic Approach called “bomba de fruta” and produced by José Manuel Jimenez, owner of the dry mill Seco de Manrepo. It’s a blend of natural processed cherries from many small producers in the department of Caldas grown at around 1800 masl and mostly castillo variety. This particular coffee didn’t turn out to be the crazy tropical fruit punch we thought it would be. It is however, a very nice coffee. It’s thick and tastes like plums and sweet spices.

The dry fermentation really comes through in the cup—it’s intensely fruity without being winey. I brewed it as a pour-over and got a clean, sweet finish that lasted for minutes.

Opened the bag and the natural process really comes through — those cherries were clearly handled with care. Brewed a cup this morning and got a bright, almost tropical sweetness that lingered nicely. For an archived lot, this one still feels incredibly fresh and vibrant.

The dried fruit aroma hits you right when you open the bag, and the natural process really shines through in the cup. I found it makes a surprisingly clean, sweet brew for a natural—definitely a unique Colombian profile.
